Catskill Provisions’ New York Honey Whiskey, Pollinator Gin, Pollinator Vodka
We want newer and better liquors like Catskill Provisions New York Honey Whiskey. You can have it straight or make interesting cocktails. Many would like the Honey Apple Pie which has two ounces of NY Honey Whiskey, three ounces of fresh hot apple cider, and garnished with cinnamon stick and lemon.
Another interesting drink is the Honey Badger that consists of two ounces of NY Honey Whiskey, one part Apple Jack or Apple Brandy, two parts Apple Cider Shake, and serve over rocks or in a chilled martini glass and garnish with a slice of kumquat or orange peel.
Their spicy, rugged handcrafted rye whiskey is subtly infused in small batches with late-summer honey from New York’s Catskill Mountains for a smooth, rich flavor with notes of toffee, burnt orange peel and golden raisin. The product is a carefully blended mix of rye, malted barley, corn, and a gentle hint of their 100 percent raw wildflower honey to create a mellow, well-rounded spirit. Blended, filtered and bottled in New York State. The honey is subtly added after aging in charred New American oak barrels to balance and soften the edges of this rugged, complex whiskey. The kosher honey is raw and never heated, which maintains all of the antioxidants and amino acids that are lost in large-scale produced honey.
Claire Marin, proprietor of Catskill Provisions, had already attained success in the corporate world as a national magazine publisher. She tends to over 300 beehives in Delaware, Sullivan, and Madison Counties in New York state in cooperation with other local beekeepers to create small batch, hand-packed honey harvested several times a year. They are one of only a few female-owned and operated distilleries in the United States. They are also the winner of the Chairman’s Trophy with a 94-rating from the prestigious Ultimate Spirits Challenge in 2017, and a Gold Medal at the 2017 SIP Awards.
In 2019, Catskill Provisions released NY Pollinator Gin and NY Pollinator Vodka with a portion of the proceeds given to protect pollinators across the country. NY Pollinator Gin and Vodka are grain-to-grass spirits distilled from non-GMO NY State corn and their wildflower honey. The gin is infused with juniper berries and pollinator-friendly botanicals such as verbena, chamomile, and angelica. Both the gin and vodka are then proofed down with pure, mineral-rich Catskill Mountain spring water. With their continued success they will be launching their Maple Bourbon.
