Ginger has many fine health benefits and many are using ginger with tea to fight against the pandemic virus. Many like ginger beer, sorrel and other ginger products.

We enjoyed the Crystallized Ginger Cubes and other products by Rose Hill Ginger Enterprises at the Specialty Food Association’s 2019 Summer Fancy Food Show at the Jacob Javits Convention Center.

Crystallized ginger, also referred to as candied ginger, is the young tender ginger root that is peeled and cooked in a syrup of sugar and water and then dried and preserved with a coating of sugar. Crystallized ginger is used in many food products. The cubes and slices of crystallized ginger can be eaten like dried apricots as a healthy snack. Most commonly, crystallized ginger are in small dices (3-6mm, 6-8mm and 8-12mm) that are used as an ingredient in baking.

More are using crystallized ginger dices added to trail mixes, granola, oatmeal and toppings on yogurt. Candy manufacturers use ginger cubes and smaller diced cuts for dipping and panning in chocolate. Ginger in Syrup can be used in many food products too. Ginger in Syrup is made from the stem and the root of the ginger plant. This ginger is cooked and preserved in syrup of sugar and water still retaining the characteristic hot flavor of ginger.

Stem Ginger in Syrup, also known referred to as wet ginger, can be sweet in syrup or pickled in a sweet-sour syrup. The sweet sour ginger is not pickled as a sushi ginger but it does have a more pungent taste.

In the sugar syrup, this ginger has the texture of a canned peach or pear and can be eaten right out of the jar, chopped over ice cream, or mixed with cream cheese or a filling or spread.

Ginger in sweet syrup is also frequently used as an ingredient for moist gingerbread or cookies. This soft texture is perfect for cheesecakes, beverages, syrups, sauces, chutneys, jams and more. Candy manufacturers use the balls and bars for dipping and panning in chocolate and the dices (3-6mm, 6-8mm and 3-30mm) are used as filling to chocolate candies. Many products use both the dry crystallized ginger and the moist stem ginger in syrup in their products. Both products are gluten-free, non GMO, natural, and can last for 24 months.

Ginger as an herb or spice is used around the world as an ingredient: Indian cuisine uses ginger as a key ingredient in thicker gravies and many other dishes; ginger is pickled in Japan for sushi; Korean kimchi uses finely minced ginger or juiced ginger; in the Caribbean, ginger is used as a spice for Jamaican ginger cake and ginger beer; France produces Canton, a ginger-flavored liquor; Western cuisine typically uses the sweet ginger as ginger ale, gingerbreads, cookies, desserts, syrups and chutneys; and ginger tea is enjoyed in most countries of the world.
